Pact is one of my absolute favorite apps to help me along my health and fitness journey. Why? Because it PAYS me to stick to my plan. True story!
Here’s how it works. Each week, you make a “pact” to commit to a certain number of healthy activities in three categories: working out, food logging, and eating fruits and veggies. Then using Pact or some of their partner apps, you log or track your activities in each category. At the end of the week, if you meet your pact, you get rewarded with cold, hard cash!!
However, part of what makes Pact so amazing is that it holds you accountable by also making you commit some of your own dough if you fail to meet your Pact. You must commit at least $5 to each activity you do not complete by Sunday night.
Pact collects the cash money from the slackers who miss their pact and divvies it up to those of us who meet it (Pact takes a cut as well).
If you are an earner, like me, you only get a small amount of change per completed activity. For me, it adds up to roughly $1-$3 per week depending on how ambitious I am. But trust me, it adds up overtime! I have almost $200 in my Pact account (which I will withdraw via PayPal soon) that I plan to spend on a mini shopping spree now that I am hitting my health and fitness goals.

I had a similar salad while cruising on the Norwegian Breakaway. Theirs was a bit simpler – I think just watermelon, olive, and feta – but totally yum. I filed the flavors in my memory bank and promptly forgot all about it.
That is, until about a week ago when I was planning the menu for a little soiree I was hosting for a few girlfriends. The salad popped in my head as I wanted to keep the meal light and fresh. I decided to augment the salad with some red onion and crisp romaine. The resulting dish was delicious. So, without further delay – here’s your recipe for the most amazing summer salad!
Watermelon, Basil & Feta Salad
1/2 head of Romaine lettuce, cut into strips
1/4 large seedless watermelon, chopped small or scooped out with a spoon
1/2 red onion, sliced thin (I use a mandolin slicer)
2 tablespoons Feta Cheese (I use reduced fat)
10-15 leaves of fresh basil (cut larger leaves in half)
1 tablespoon of extra virgin olive oil
Sprinkle of Salt
Generous sprinkle of freshly ground pepper
Spread Romaine on serving platter or place in large bowl.
Layer watermelon on top of lettuce.
Next, scatter red onion and crumble feta cheese on top of watermelon.
Drizzle oil and squeeze lime juice and finish with salt and pepper.
